Bistro Kaapeh, the Mexican café that has become a fixture of Sherbrooke’s downtown since its opening in 2013, is starting off 2018 with an expansion into Lennoxville’s Champlain College. Although the café’s owner was unavailable to speak with The Record on Sunday, a post on the business’s facebook page at the end of last year shared the business’ excitement about the new project.
