My Bake: By Geoff Agombar

The format of a My Take is 150 words – no more, no less – to express an opinion on a different topic each week. This week’s topic was bake sales.

1. Turn off the news. 2. In saucepan, stir one cup granulated sugar and 3/4 cup light corn syrup over medium-high heat. 3. Bring to boil, then remove from heat. Stir in one cup room temperature, creamy peanut butter. 4. Pour mixture over six cups Special K cereal in a large bowl. Work quickly before it firms up too much. 5. Press into a buttered 9×13 deep baking dish. 6. In a saucepan, melt one cup semisweet chocolate chips and one cup butterscotch chips over low heat. Go slowly. Resist temptation to turn up heat, or you risk burning the chocolate or causing it to seize up. 7. Once melted, pour over baking dish and smooth out topping. 8. Let set two hours before cutting and serving. (Optional) Top with a sprinkling of course sea salt to balance sweetness. (Optional) Gingerly turn news back on.
