Siboire steps up production

Pierre-Oliver Boily and Jonathan Gaudreault, the co-owners of Sherbrooke microbrewery Siboire, inaugurated their new factory on ­Wednesday afternoon. Built in the part of Sherbrooke’s old Depot Street train station that formerly housed the Limocar bus station, the expanded facility allows for the business to produce its signature brews in larger batches and sell them in cans onsite. According to Gaudreault, the idea was inspired by the taprooms in Vermont breweries and is meant to help build on the connection between the brewers and the clientele that the owners already condier to be a key part of Siboire’s business model.
